After training in Tokyo, Mr. Sasaki is now offering a casual way to enjoy Edomae Sushi.
He was born in 1995 in Tokyo. Guided by a high school mentor, he entered the world of sushi as a teenager. He honed skills at renowned Tokyo establishments: six years at Sushi-ya no Matsukan in Azabu-Juban, five years at Sushi Riku in Minami-Aoyama, and six months at Sushi Koshikawa. He currently demonstrates his expertise at Sushi Umiji Nihonbashi. His daily dedication is to make Edomae sushi more accessible and familiar to a broader range of guests, providing a casual way to enjoy it.
