Mr. Kanatani was born in 1991 in Kyoto. Inspired by Mr. Takashi Doi, the head of Doikatsuman, he entered the main store as a young chef. Through daily practice, he has mastered the charcoal-grilling technique for cooking thick eel to fluffy perfection, along with the passion of the artisans who have delighted people with delicious eel. Afterward, the third store branch, Doikatsuman Kinkakuji Branch, opened, and he became its owner and chef. Now, the brand's fourth location, Doikatsuman Arashiyama Branch, has newly opened.
