Mr. Takahashi was born in 1983 in Yamagata Prefecture. Born into a butcher family, he encountered meat ever since he was young. He trained for 12 years at Western restaurants in Yamagata and Osaka, learning how to handle cooking and meat. He enjoys cooking and eating, and became a chef because he wanted to create food that he himself would enjoy. It's been 10 years since he inherited his family's butcher shop, and he pursues the charms of ingredients both in terms of his careful eye for meat and cooking.
