Mr. Itokazu was born in 1989 in Okinawa Prefecture, and began his career in the food industry as a teenager. He gained experience across a wide range of restaurants, never limiting himself to a particular cuisine - from Western-style restaurants to Japanese eateries, seafood izakayas, and high class bars. In his mid-20s, he began working on restaurant launches and menu development in addition to kitchen work. At Big Bite Chatan, he creates a space where diverse culinary experiences come together, featuring a menu inspired by a mix of American and Okinawan styles, with the exterior graphics and interior design incorporating Okinawan plasterwork.
