Mr. Saito was born in 1994, and chose the path of an eel artisan after graduating from university. He threw himself into training in a discipline that is often said to involve three years to master skewering, eight years to master filleting, and a lifetime to master grilling. He currently works at the Sumiyaki Unafuji Tokyo Opera City Branch, where he works with high quality eel every day in his pursuit of serving guests the very best dish possible.
