[Sushi Naoki] is 5 minutes from Higashi Chayagai, a neighborhood in Kanazawa whose latticed windows and cobblestone streets have been recognized as an Important Preservation District for Groups of Traditional Buildings by the Japanese government. It opened its doors in May 2020. The chef, Mr. Kita, is a friend of the fishermen who work at the nearby fishing harbor, and personally visits every day in order to rigorously select the best ingredients for his restaurant. Kanazawa is his hometown, and he wants to share the local flavors with his guests, so he meticulously prepares seafood such as white fishes, bluebacks, and shellfishes from the nearby ocean. He picks out the best fish of each season to serve to his customers, from sardines in spring to Japanese whitings in summer, sea breams in fall, and amberjacks in winter.
