Ingredients include local specialties such as "Noto beef," representing Ishikawa. The rice is cooked using brewing water ((Hyakunen Sui)) from Fukumitsuya, a long-established sake brewery in Kanazawa. Rice carefully cooked in a kamado pot with the local spring water is exquisite. For special occasions like business meetings or anniversaries, course meals featuring the flavors of Kaga Hyakuman-goku are recommended.
