Mr. Takano was born in 1988 in Niigata, and decided to walk the path of cuisine during a part-time job at a soba restaurant in high school. Inspired by the example of a master chef he learned the attitude and skills of a true artisan. Over the years, he has refined his craft in sushi restaurants, traditional Japanese restaurants, and hotel restaurants, spending 15 years refining his skills in sushi and Japanese cuisine. Valuing the seasonality and bounty of the land, he uses local ingredients to bring the unique flavors of each season to his dishes.
