A chef dedicated to eel, who weaves a spirit of tradition along with skills that discern seasonal foods.
Mr. Koto was born in 1998 in Nara Prefecture, he honed his skills by preparing meals every day from a young age. The joy he felt when those around him said, "That's delicious," inspired him to pursue this career path. He spent two years studying Japanese cuisine at one of Nara's most prestigious traditional restaurants, while also honing his skills at the attached eel restaurant, where he met the chef he now regards as his mentor. After moving to Tokyo, he gained experience at several specialty eel restaurants. He holds dear the spirit of Japanese cuisine, which has been passed down through generations, and makes it his creed to prioritize seasonal ingredients and make the most of the finest produce available at any given time.
