The dashi (Japanese broth) is a melange of local flavors. Experience the harmony yourself. The hand-made, fragrant udon noodles are made using wheat flour originating from the Tokachi plains. Our shop cooperates with farmers in Shimizu, Suginami Ward, and provides vegetables grown with organic fertilizer made from used dried sardine soup stock. By reducing waste, making effective use of resources, and using locally produced agricultural products, we also strive to reduce food miles.
