Moved by the ramen he ate as a child, Mr. Kakei decided to pursue a career as a chef.
Mr. Kakei was born in Fukui Prefecture in 1984. Impressed by the ramen he ate as a child, he decided to become a chef as his future dream. He trained at the Yokohama-style Iekei ramen shop "Samurai" in Nagoya and went independent in 2015. He opened "Yokohama Iekei ramen Hide" in his hometown of Fukui. Subsequently, in 2022, he opened the affiliated restaurant "Jingisukan Sen." In February 2026, it reopened as "Sen."
