Based on his experience in developing hospital meals, Mr. Yoshihara decided to incorporate additive-free foods.

He was born in 1973 in Osaka. He had a passion for cooking from a young age. At the age of 15, he decided to pursue a career in the culinary arts and began his training. After honing his skills at udon and yakitori restaurants, he moved to a company specializing in hospital meals. Based on his experiences at that time, he decided to focus not only on nutrition but also on ingredients, incorporating additive-free foods and similar options. He later ventured out on his own, running an udon shop and an izakaya. In November 2018, he opened a restaurant called Yatai Mare that features additive-free foods. In April 2025, he opened another restaurant, Udon no Gokushin Mare.
