Mr. Ushigome was born in 1984 on Miyake Island, Tokyo. He grew up surrounded by Japan's rich food culture and aspired to become a chef from an early age. He thoroughly mastered the fundamentals of Japanese cuisine, honing his skills particularly in meat selection and cooking techniques. Under the supervision of Chef Shinji Odawara, a Bib Gourmand recipient in the Michelin Guide, he has been involved in developing menus featuring A5 Wagyu beef. Driven by the desire to "deliver an experience that transcends cultural and language barriers through food," he strives to create dishes that bring out the full potential of Wagyu beef.
