Mr. Ushigome was born in Tokyo in 1984. Believing that Japanese cuisine is an integral part of daily life, he chose a path dedicated to conveying the charm of rice, dashi broth, and seasonal ingredients. After gaining approximately 15 years of experience at Japanese izakaya and seafood restaurants in Tokyo, he learned how to prepare fish, make dashi broth, cook seasoned rice, and prepare appetizers. He has focused particularly on refining his approach to rice-based dishes, carefully studying soaking times, heat control, and ingredient pairings. By avoiding excessive embellishment and instead highlighting the natural flavors of rice, fish, and chicken, he creates comforting dishes that convey the essence of Japanese cuisine.
