When it comes to meat, he places great importance on bringing out the natural flavors of the ingredients by making careful decisions at every stage - from sourcing and preparation to serving. Valuing the intuition honed through daily operations, he meticulously assesses the condition of the Japanese Black Wagyu beef and remains committed to serving it in the best possible form each day. Combining consistent technical skill with a flexible approach, he continues to deliver a satisfying dining experience to his guests.
