This restaurant has appealing, free and open Japanese and Western cuisine that shines with the natural flavors of seasonal ingredients.
Mr. Yoshimura was born in Osaka Prefecture in 1977. Head chef at Maru Ginza, a restaurant specializing in Japanese-Western fusion cuisine. He began his career at an Italian restaurant in Osaka, where he honed his skills for many years. He also gained familiarity with authentic culinary techniques and food culture through training at a restaurant in the suburbs of Rome. After returning to Japan, he worked at creative cuisine restaurants in Osaka. He later moved to Tokyo and joined Maru, a chain with several locations in the city, where he continued to gain experience. He assumed his current position in December 2025, coinciding with the renovation of the restaurant. Drawing on a wide range of Japanese, Western, and Chinese culinary techniques and a flexible creative approach, he delights guests with enchanting fusion dishes.
