Mr. Yoshimoto is a native of Tokyo. Mentored by the second restaurant head when he was 18 years old, he currently serves as the third restaurant head of Sushi Katsu. In addition to preserving the traditions of good and old fashioned Edomae sushi, passed down over the generations, he continues to engage with creative ideas made possible thanks to his own modern day perspective. He serves true masterpieces that suit the times and his guests, while placing great importance on ingredients he stocks from his own morning market visits, as well as his daily encounters with customers.
