Drawing upon insights cultivated in various places, Mr. Sato continues to explore his approach to meat.
Mr. Sato was born in Kagawa Prefecture in 1991. Starting with experience at a food processing plant for nursing care facilities, he moved into the food service industry. After serving as manager at a steakhouse and overseeing the operations of multiple locations, he became an area manager for a chain restaurant and later took on a role as a director, becoming involved in management. On the front lines, he studied meat aging and changes in meat condition, refining his handling techniques to account for seasonal variations and individual differences. After honing his skills at a teppanyaki restaurant in Tokyo, he struck out on his own and opened the new restaurant, Wagyu Steak Senri.
