Mr. Ezaki was born in 1979 in Tokyo. This chef honed his skills at Japanese restaurants, mastering the handling of ingredients and techniques for cooking over fire. Having lived in Nakano for many years, he was inspired to pursue this career by a desire to contribute to the local community through food. He places great importance on personally verifying everything from daily ingredient sourcing to the actual cooking process. In charcoal-grilled cuisine, the focus is on carefully assessing the condition of the ingredients and applying the optimal level of heat. He aims to create a restaurant that is deeply rooted in the local community and beloved by many people.
