Mr. Kumazawa was born in Gifu Prefecture in 1985. Owner and head chef of 【cen】. He built his career as a Japanese chef primarily at Japanese restaurants in Nagoya, exploring how to bring out the best in seasonal ingredients. After serving as head chef at 【Shun Washoku 279】a sister restaurant to his current establishment, he opened 【cen】 in March 2026. He further evolves his cuisine, which celebrates the fleeting moments of the changing seasons, and also offer boundary-breaking dishes made with flexible creativity. His cuisine, with its innovative Japanese food, is breathing new life into Nagoya's food scene.
